Four words: Gluten-Free Pumpkin Loaf.

Ah yes, fall is around the corner. The world has become nothing less than obsessed with all things pumpkin- pumpkin beers (which aren’t gluten-free and, therefore, we can’t consume)…the beloved Starbucks Pumpkin Spice Latte (affectionately known as “PSL”)…and soon enough, pumpkin pie and other pumpkin goodies will be as prevalent as water.

 

I want to add ammunition to the pumpkin trend by talking about one of my favorite things not just during fall, but at any point during the year: Gluuteny Bakery’s gluten-free pumpkin loaf. Gluuteny Bakery is a Pittsburgh, PA-based gluten-free bakery that makes cookies, cupcakes, and all things in-between. Their baked goods are nothing short of heavenly, giving the gluten-free eater a sweet option that actually tastes like something, instead of feeling like we ate an entire bundt cake in one mouthful. (My gluten-free eaters know what I’m talking about!) As a matter of fact, I plan on asking Gluuteny Bakery to make our wedding cake- a bride’s gotta eat her own wedding cake, you know! 🙂

 

I was pleasantly shocked with Gluuteny Bakery reached out to me a few months ago and asked me if they could send me some of their mixes and fresh products. “Of COURSE!” I gleefully accepted. I have been savoring these delicious treats all summer. One of them…was a baking mix for pumpkin loaf.

 

I’ve had Gluuteny Bakery’s pumpkin loaf made in-house by them before, but have never tried to make it myself. The ingredients were simple and typical: 2 eggs, oil, and 1/2 can of pumpkin. “Simple!“, I thought. Its ingredients were easy to acquire and easy to use.

The only downside with the pumpkin loaf mix (as many of their mixes need, too) is that it needed 1h10min to bake. I quickly popped it into the oven while the fiancĂ© and I ate dinner. However, if I was running short on time, it might be an issue, as this loaf needed an additional 10 minutes or so to bake. The results…were more than worth it.

We each enjoyed a slice with a dollop homemade cinnamon whipped cream on top (ooh la la!)  and it was wonderful: the loaf was moist, the exterior crust was not too tough… it tasted heavenly. I plan to get another pumpkin loaf baking mix (or 3?) for the fall season.
