An Ode to Summer: Marinated, Grilled Zucchini

As I breathe a heavy sigh, knowing that summer is ending soon…I won’t loosen my grip on it just yet! 🙂

 

If you are grilling for Labor Day weekend, try this incredible recipe. Zucchini is in-season and very affordable right now, so this is a cheap side dish to eat alone or bring to a cookout. Is it bad that I’m repeating this recipe? I love it so much, it deserves to be posted TWICE. You really should check it out!

Marinated, grilled zucchini planks

 

Ingredients: 

Marinade:

-1/4 cup pine nuts

-1/4 cup olive oil

-2 cups packed basil

-salt and pepper to taste

-at least 1 medium or large zucchini

 

Directions: 

  • Make a simple basil pesto with pine nuts, olive oil, basil, salt and pepper.
  • Marinate zucchini slices for at least 30 minutes prior to grilling
  • Grill zucchini slices for 2-5 minutes on each side.
  • Voilá! You’re done!
