Today I am sharing a recipe for delicious and simple marinated, grilled zucchini. I swear, it was as delicious and hearty as meat! Give it a try for yourself during this summer’s grilling season:
MARINATED ZUCCHINI ON THE GRILL
-2 cups basil
-1/4 cup pine nuts
-1/4 cup olive oil
-lemon juice (optional)
-1 tsp salt
-Blend ingredients (essentially homemade basil pesto) above in blender.
-Pour over slices of zucchini; let marinate in refrigerator for about 30 minutes. Save some of the sauce for “braising” afterward.
-Grill marinated slices of zucchini on medium for about 2-3 minutes on each side, enough to get those gorgeous grill marks.
-Brush additional pesto marinade on top and ENJOY!
