I think my title above represents my life right now- ha ha!
Need a quick meal idea? I posted this idea on Instagram last night and thought I’d share it with my readers. This is a GREAT meal full of nutrition, protein, and veggies to keep your body fueling on all cylinders.
- 2 eggs in an omelette with a handful of diced grape tomatoes
- A modest bit of quinoa (cooked in chicken broth), plus a little bit of marinara because I was craving pizza 😉
- 1 cup spinach (with your choice of vinaigrette)
- 1 “cold one”, as I call them- Perrier sparkling water. It’s how I get that carbonation fix!
