A friend of mine (who is a North Carolina native) recently brought me back two baking mixes from Simple Mills. I had never heard of the brand, but what I saw looked promising: a grain-free, non-GMO, low glycemic baking mix? It definitely sounds good to me!
I baked the muffins in the morning as I got ready for the day. They didn’t take long, and the baking instructions were easy to follow.
The only lament I had was that I wish the baking mix made more! I got about 9 muffins out of the mix, and I gobbled them up so quickly. I have found that a lot of gluten-free baking mixes aren’t really that “healthy”, with high amounts of starches and sugars. I have experienced shaky sugar crashes when I make Pamela’s pancakes, despite the fact that they are delicious…but these muffins gave me no such sugar shock.
The muffins had coconut as the “sweet” factor and they were delicious. I went to my local Whole Foods to buy more, but it looks like they don’t sell them in my market whatsoever! Nevertheless, I plan to buy more mixes soon (or try to mimic my own).
A great product with delicious taste and high-consciousness of health? Simple Mills has my vote. I only wish it was a little bit more cost-effective and that the mix would make more product. I give it a 4/5!
