I recently began to cook lentils regularly because of their immense amount of fiber and protein. While a typical lenti looks (and maybe tastes) less-than-appealing, these lentils still look unappealing but taste fantastic. After throwing in the fact that they are incredibly easy to make, I can’t stop making these delicious, nutritious things!
Vegetable Stock Lentils
- 1 cup uncooked lentils
- 2 cups water
- 1 pod Knorr’s Vegetable Stock
- Bring 2 cups water and 1 pod concentrated stock to a boil. While water is coming to a boil, clean 1 cup of lentils and check for stones, twigs, etc.
- Once the water and stock have come to a boil, combine lentils with water. Reduce to low simmer (very little bubbling), uncovered, for 30-40 minutes. (I check on them at 25 minutes.) Make sure that there is at least a small layer of water covering all of the lentils; a little may need to be added.
And, voila! SERIOUSLY delicious lentils.
These lentils were so good, even my 15-year old brother tried some. He said they “weren’t bad”, which is high praise from my lovable, picky eater!
I HIGHLY recommend trying these for a pack of protein and fiber into your diet. I now eat them as my main source of protein during a meal!
