I recently found an article on the Huffington Post website that offers healthier alternatives to our favorite, tried-and-true winter comfort food staples. For example, HuffPost suggests trying boiled cauliflower as mashed potatoes, seasoned with Parmesan cheese. They even offer a Quinoa-style mac and cheese recipe! Some of the other recipes are quite elaborate, but I appreciate their creativity. Granted, some of the items aren’t gluten free, but we can absolutely adapt to make them gluten free at home. It makes you re-consider how you can make some of your favorite comfort foods and add healthier options to your menu.
