Breakfast with Blueberries: GF pancakes

This morning I made a delicious, lazy Friday breakfast food: gluten free, quinoa, blueberry pancakes. It’s literally as simple as making normal mix pancakes- all you do is change the ingredients.

Gluten Free Quinoa Blueberry Pancakes

Ingredients:

  • 3/4 cup gluten free pancake mix (I used Bisquick’s GF mix)
  • 1/4 cup quinoa flakes
  • 2 tbsp butter, melted
  • 1 egg
  • 1 tsp salt
  • 1 cup blueberries

Directions:

  • Mix all ingredients together in a large bowl. Heat skillet to medium heat and pour 3-inch diameter pancakes into the skillet. Cook and serve.

The quinoa adds protein and fiber to this breakfast staple. It will fill you and your kids up for a bit longer than the typical pancake. If you want to be artsy, yes, you can make these pancakes from scratch without any type of mix, but I was in the mood for simple, delicious, healthy pancakes. Smacznego- Happy Friday!
