Recipe Wednesday: Cherry Tomatoes stuffed with Goat Cheese

Your friends, family and co-workers will be so impressed with your gourmet skills with this next recipe. I can’t take credit for it though- I learned it from my effortlessly fabulous co-worker, Sandy. Props to her!

Cherry Tomatoes stuffed with Goat Cheese

Ingredients:

  • Cherry tomatoes
  • Goat cheese
  • Pepper (optional)

Directions:

  • Wash the cherry tomatoes and cut them into halves. Freshly Cut Cherry Tomatoes
  • Use a knife and stuff each tomato with goat cheese. If you’re making this as a snack for yourself, you can just insert goat cheese as you eat them one by one. If you are making a dish for a dinner party, stuff them and insert a toothpick in each one. They can be a healthy, gluten free hors d’oeuvre!

  • If you want to be meticulous, you can take out the insides of the tomatoes with a spoon. I’m too lazy for this, and so I just push the goat cheese into the top of each tomato half.
  • Season with black pepper, if desired. And viol√†! You’re done.

I myself used them in my quinoa pasta dish (found in the product review from the day before). With a smidge of parmesan cheese, it was artistic, beautiful, healthy and so delicious.
